The colour is straw yellow with a fine, steady bead, and the nose gives pear, apple and white peach with a light note of honey.\u003c\/p\u003e\n\u003cp\u003eThe palate is where the ageing pays off: complex, elegant and finely drawn, with a persistent length lifted by citrus. H. Blin has been making Champagne at Vincelles since 1947, and the house style favours precision over weight. Serve it with a gratin of scallops and crayfish, grilled pork with cauliflower puree, or a wedge of eighteen month Comte.
