Craftsmanship

Rum is produced from scratch at the City Borders Distillery, ensuring an authentic and high-quality spirit. The process begins with blending sugar cane molasses with Cheddar spring water, followed by the addition of a carefully selected blend of yeasts that ferments for 12 to 14 days.

Once fermentation is complete, the wash is transferred to a copper pot still, where it undergoes three distillation runs—two stripping runs and one spirit run. During this process, careful cuts are made to extract the hearts, which represent the best part of the distillate. The resulting liquid is then reduced to the preferred drinking strength of 43% ABV by adding water that has been filtered in-house using a reverse osmosis system.

Each bottle is lightly filtered and bottled one by one, sealed with biodegradable tamper seals, hand-labelled with cane fibre recycled labels, and signed. Every part of this process is powered by 100% renewable energy, showcasing a commitment to sustainability.
