Every year on 12th July, wine lovers across the globe come together to celebrate International Cava Day, a tribute to Spain’s most famous sparkling wine. Steeped in history, Cava is often underrated in comparison to other traditional method sparkling wines such as Champagne and Cremant, however International Cava Day is an opportunity to celebrate its true status as a top sparkling wine.
Beginning in the Heart of Catalonia
The story of Cava begins in a small corner of the world in Sant Sadurní d’Anoia, nestled in the rolling hills of Catalonia. Inspired by the legendary bubbles of Champagne, Josep Raventós of Codorníu Winery produced the first bottles of Spanish sparkling wine in 1872, using the traditional method (known as méthode champenoise).
A key difference between the sparkling wines of France and the newly discovered Cava was the use of a trio of native grape varieties Macabeo, Xarel·lo, and Parellada, which together give Cava its distinctive character: fresh, fruity, and complex.
The Birth of Cava
In 1887, the phylloxera plague swept through Europe, destroying vineyards. But in the Penedès region, winemakers seized an opportunity by replanting with resilient white grape varieties. They set the foundation for what would become Cava, a sparkling wine with its own unique identity, separate from its French counterpart.
By the early 1900s, Cava was celebrated across Spain, even earning the royal seal of approval with King Alfonso XIII’s visit in 1904. The name Cava, meaning 'cellar' in Catalan was officially adopted in 1970, cementing its status as the true sparkling wine of Spain.
Cava Today: A Global Celebration
Fast forward to today, and Cava is enjoyed in homes, bars, and restaurants across the world. It's popularity has certainly decreased due to the rise in sales of Prosecco - however quality of Cava has never been better. The Cava Regulatory Board continues to champion excellence, with stricter rules on ageing, grape sourcing, and sustainable practices meaning that some Cava can rival the best of Champagnes.
