Babylonstoren Shiraz presents a deep ruby red colour, inviting you to explore its enticing aromas. The nose reveals a fruit-driven profile with cool cassis, pencil shavings, and aromatic layers of spiciness and black pepper. On the palate, this finely crafted wine offers layers of cherry, soft prune, blackcurrant, and hints of spice, culminating in an elegant, velvety mouthfeel and a long, lingering finish. Its surprisingly fresh mid-palate makes it enjoyable from the year of release, with an ageing potential of up to ten years.

Craftsmanship

The Shiraz grapes are fermented on their skins for about seven days, followed by an extended maceration period of one week. The wine is then pressed into a combination of 70% new and 30% second-fill 300-litre French oak barrels. After malolactic fermentation, the wine is racked and returned to the barrels for another 18 months before bottling. This meticulous process enhances the wine's complexity while allowing the fruit to shine through.
