A Rare and Complex Sherry of Great Character
Palo Cortado is one of the rarest styles of sherry — initially aged under a veil of flor as a fino or amontillado, but inexplicably losing that protective covering and then developing oxidatively in the manner of an oloroso. Only 1–2% of all sherry naturally follows this path, making it a true curiosity and a collector's treasure.
Romerito Palo Cortado has been aged in a traditional solera system for around 18 years, developing a pale mahogany colour and extraordinary complexity. Walnuts, orange zest and dried fruits give way to a saline tang on the finish that lifts and prolongs the palate beautifully — very long, very complex, and endlessly fascinating.
