A Rare and Complex Sherry of Great Character

Palo Cortado is one of the rarest styles of sherry — initially aged under a veil of flor as a fino or amontillado, but inexplicably losing that protective covering and then developing oxidatively in the manner of an oloroso. Only 1–2% of all sherry naturally follows this path, making it a true curiosity and a collector's treasure.

Romerito Palo Cortado has been aged in a traditional solera system for around 18 years, developing a pale mahogany colour and extraordinary complexity. Walnuts, orange zest and dried fruits give way to a saline tang on the finish that lifts and prolongs the palate beautifully — very long, very complex, and endlessly fascinating.

Romerito is a Jerez producer specialising in oxidatively-aged sherry styles, with a focus on the rare and complex Palo Cortado — a style that begins with the fresh, tangy character of Fino before unexpectedly losing its protective flor yeast and developing the rich, rancio depth of an Oloroso. Palo Cortado is prized for combining these two apparently contrasting styles in a single, harmonious wine of exceptional elegance.
