The Third Chapel
The Cassagnau La Chappelle range already gives us a Pinot Noir and a Chardonnay, and the rosé completes the set. It is a pretty pale colour, and the aromas are expressive rather than shy, with redcurrant, citrus, cranberry and raspberry all clearly drawn. The palate is elegant, properly dry and fresh from start to finish, which is what separates a good southern French rosé from a merely pink one.
Cinsault, Grenache and Carignan is the classic southern French trio for rosé, each bringing something the others lack. Chill it well and serve with salade niçoise, grilled prawns or a plate of cold roast chicken in the garden. It is vegan certified and sits comfortably at the everyday end of the range, which makes it easy to keep a couple in the fridge through summer.
