Why we chose it

“Cornish seaweed in the botanicals leaves a savoury edge under the aniseed that I have not found elsewhere. At 66% it wants ice-cold water, through a sugar cube if you like.”

About this wine

This handcrafted Absinthe is striking from the first pour, with a pale green colour enhanced by the unique use of Cornish seaweed. It brings classic aromas of aniseed and layered herbal notes, with a subtle savoury umami character in the background. Made using wormwood grown by Josh at Wild St Ives on the cliffs near Zennor, close to Pendour Cove and the legend of Morveren, this is an Absinthe with real Cornish identity.

Despite its powerful 66% ABV, the finish is impressively smooth, long and fresh, with very little burn. Enjoy it neat, poured through a sugar cube, or diluted with ice-cold water from a traditional Absinthe fountain for a classic, atmospheric serve.

About the producer
