Craftsmanship

Cultivated on the estate, the grapes for Babylonstoren Viognier are meticulously harvested at optimal ripeness. Seventy percent of this wine underwent fermentation in stainless steel tanks for three weeks, then was racked off the primary lees and kept on secondary lees for seven months before bottling. Twenty percent was fermented and matured in second- and third-fill 300-litre French oak barrels for seven months, while 10% was fermented and matured in a 4,100-litre French oak foudre before being blended and bottled. This careful winemaking process enhances the wine's complexity while allowing the varietal's unique characteristics to shine.
