Eight Years in the Cellar, and It Shows
A vintage Champagne is only made in years good enough to stand on their own, and the 2018 spent eight years on its lees before release. It is an even split of Meunier and Chardonnay grown around Vincelles in the Marne valley, and it went through no malolactic fermentation, which is what keeps the acidity so bright. The colour is straw yellow with a fine, steady bead, and the nose gives pear, apple and white peach with a light note of honey.
The palate is where the ageing pays off: complex, elegant and finely drawn, with a persistent length lifted by citrus. H. Blin has been making Champagne at Vincelles since 1947, and the house style favours precision over weight. Serve it with a gratin of scallops and crayfish, grilled pork with cauliflower puree, or a wedge of eighteen month Comte. It handles an apple crumble beautifully too, which is not something you can say of every Champagne.
