Akashi Tai's Shiraume Ginjo Umeshu takes this tradition to a premium level, using Ginjo-grade sake as the base — a delicate, fruity style of sake that adds complexity and refinement to the finished liqueur. About the producer

Akashi Sake Brewery has worked on the shore of Osaka Bay in Hyogo since 1918, beginning in shochu before turning to the sake that made its Akashi-Tai name. Toji Kimio Yonezawa still brews in small hand-made batches, drawing on Hyogo's celebrated rice and soft water, and the brewery now exports its sake and liqueurs to some thirty-five countries.
