About this wine
Castellaro comes from the Classico heart of Soave, where volcanic slopes give the Garganega grape its mineral backbone. The wine is an intense straw yellow, with enveloping aromas of white peach and a soft, almost creamy texture. On the palate the fruit is framed by clear mineral notes and a beautifully judged line of acidity. The finish is long and precise.
Domini Veneti is the estate arm of a growers' cooperative working some of the best sited vineyards in Soave and Valpolicella. Pour it with grilled sea bass, a spring vegetable risotto, or soft young cheeses. This is a white with enough substance to sit at the dinner table rather than only before it.
Where This Wine Comes From
Soave Classico sits east of Verona in the Veneto, on volcanic slopes that give its wines a distinct mineral edge. Castellaro comes from the historic heart of the zone.
Garganega
Soave's signature white grape. Slow to ripen, giving white peach and almond alongside a firm line of acidity.
Volcanic Soils
The Classico hills are old basalt. They hold water well and lend the wine the stony, saline character that separates fine Soave from the rest.
