Why we chose it

“Genshu means undiluted, and you feel it — highly polished Yamadanishiki rice, silky, with a real umami core. Serve it chilled in a wine glass rather than a thimble.”

About this wine

Elegant, refined, and richly expressive, Akashi Tai Daiginjo Genshu is a premium sake that showcases the artistry of traditional Japanese brewing at its finest. Crafted in small batches at the Akashi Sake Brewery near Kobe, this un-diluted (genshu) Daiginjo offers a full-bodied, aromatic experience designed for the discerning palate.

Brewed using highly polished Yamadanishiki rice, regarded as the king of sake rice, this sake delivers a purity and depth that's second to none. On the nose, delicate floral and tropical fruit aromas are underpinned by subtle hints of white peach and melon. The palate is silky and smooth, with a rich umami core balanced by vibrant acidity, leading to a long, dry finish. A perfect gift for sake enthusiasts or a sophisticated addition to any fine dining experience.

About the producer

Akashi Sake Brewery has worked on the shore of Osaka Bay in Hyogo since 1918, beginning in shochu before turning to the sake that made its Akashi-Tai name. Toji Kimio Yonezawa still brews in small hand-made batches, drawing on Hyogo's celebrated rice and soft water, and the brewery now exports its sake and liqueurs to some thirty-five countries.
