Babylonstoren Cabernet Sauvignon is a beautifully structured red that showcases the estate's dedication to balance and purity. Fermented on its skins for around a week and matured in 50% new and 50% second-fill 300-litre French oak barrels for 18 months, this wine combines power with refinement.
Deep garnet in colour, it opens with aromas of cassis, blackberry, and dried herbs, framed by subtle notes of cedar and dark chocolate. The palate is rich and layered, with firm yet elegant tannins and a long, graceful finish. A true reflection of the Simonsberg terroir — bold, polished, and distinctly Babylonstoren.
