Why we chose it

“Cap Classique is made the same way as Champagne, and this all-Chardonnay one holds its own in that company. Bone dry with a fine bead — oysters, or smoked salmon.”

About this wine

Babylonstoren Sprankel is a beautifully crafted Méthode Cap Classique (MCC) made entirely from Chardonnay, produced at the celebrated Babylonstoren estate in South Africa's Franschhoek Valley. South Africa's MCC category is the country's answer to Champagne — same traditional method, same secondary fermentation in bottle — and Sprankel is one of its finest expressions.

The wine shows a fine, persistent mousse with notes of citrus zest, white blossom and subtle brioche, all carried by a clean, refreshing line of acidity. Bone dry in style with just enough texture to feel generous on the palate, it's a sparkling wine of real poise and elegance.

Serve well chilled as a standalone aperitif, or partner it with oysters, grilled prawns, goat's cheese, smoked salmon or sushi. Its delicacy and quiet luxury also make it one of the more special bottles on our shelf for gifting.

About the producer

Babylonstoren is one of South Africa's oldest wine farms, with a history stretching back to 1692 on the slopes of Simonsberg in Stellenbosch. Restored and reimagined as an extraordinary wine, garden, and hospitality estate, Babylonstoren produces a distinctive range of wines that express the Simonsberg terroir, from the award-winning Babel blend to single-varietal expressions of Mourvedre, Shiraz, and Viognier.
