City Borders Naturally Spiced Rum is a delightful tribute to the art of rum-making, showcasing a vibrant blend of flavours that highlight the spirit's natural character. Crafted from pure sugar cane molasses blended with local Cheddar spring water, this rum starts its journey by being heated to a target temperature, where a carefully selected natural yeast is added and left to ferment for at least 10 days.

With every sip, you'll encounter an inviting aroma of spices that dance across the palate, enhancing the smooth and rich profile of the rum. The infusion of botanicals—including fresh stem ginger, cassia bark, cloves, peppercorns, grains of paradise, star anise, vanilla pods, and fresh orange zest—creates a complex yet harmonious flavour profile. Expect layers of warm spice balanced with zesty citrus and sweet undertones that linger beautifully.

Craftsmanship
City Borders Naturally Spiced Rum is a testament to the distillery's commitment to quality and sustainability. After fermentation, the wash is transferred to the copper pot still, known as Louise, where three separate distillations are carried out. Careful cuts are made to ensure that only the highest quality liquid is collected. The ABV of the rum is then reduced using water filtered through a reverse osmosis system, ensuring purity and clarity.

A range of ethically sourced, all-natural ingredients is steeped in the Pure White Rum for up to seven days, enhancing its unique character. Each bottle is lightly filtered and bottled by hand, one by one, sealed with an in-house etched stopper, and adorned with a biodegradable tamper seal. Once labelling is complete, every bottle is inspected to meet high standards, with the distiller signing each one and the batch number handwritten on the label.
