About this wine

City Borders Pure Single White Rum is crafted from scratch at their Bristol distillery, beginning with sugar cane molasses blended with Cheddar spring water and fermented with carefully selected yeasts for 12 to 14 days. The wash is then distilled three times in their copper pot still — two stripping runs and one spirit run — with precise cuts to extract only the finest spirit. Reduced to 43% ABV using reverse osmosis-filtered water, every bottle is lightly filtered, hand-labelled and signed, powered by 100% renewable energy.

On the nose, fresh sugarcane and hints of citrus; on the palate, smooth vanilla and coconut with a subtle spiciness and a clean, refreshing finish. The ideal base for a Mojito, Daiquiri or Ti’ Punch, or simply enjoyed over ice with lime.

A sustainable craft distillery in the village of Bitton between Bristol and Bath, founded in early 2020. Chew Valley uses certified organic neutral grain spirit and sustainably sourced botanicals with Cheddar spring water to produce a range of gins crafted with genuine environmental responsibility.
