Why we chose it“El Lince de Perahigos Rufete Serrano Blanco — white wine from Salamanca’s Sierra appellation. Rufete is normally a red grape but this white version is genuinely fascinating and unusual.”

About this wine
Produced by Perahigos, this wine comes from the remote Sierra de Salamanca, an area known for its old vines, granite soils and high-altitude vineyards. Perahigos is a small, quality-focused producer dedicated to preserving local grape varieties and expressing the unique character of this lesser-known corner of Spain. El Lince is made from Rufete Serrano, a rare white mutation of the Rufete grape, grown on steep, rugged sites where low yields and cooler conditions bring natural freshness and precision.
Winemaking is deliberately gentle, allowing the grape's purity and the landscape's mineral character to shine through. The palate is bright and finely balanced, with citrus-led freshness, subtle herbal notes and a clean, stony finish. Characterful yet refined, it is an excellent choice for those looking to discover something distinctive and terroir-driven.
