Valpolicella's Sweet Secret, Poured After Dinner

Recioto is the historic sweet wine of Valpolicella, made from dried Corvina and Rondinella grapes whose natural sugars are left unfermented. This one is a deep ruby red with violet hints, and the nose is full of raspberry, cherry, prune and plum. The palate is sweet, soft and creamy, closing with warm notes of raisin. Sweet it may be, but there is plenty of fresh fruit acidity holding it together.

La Preare works in the Classica zone of Valpolicella, where the practice of drying grapes through the winter goes back centuries. Serve it cool in small glasses with dark chocolate, a cherry tart, or a wedge of Gorgonzola. It comes in a 50cl bottle, the right size for a wine you pour by the glass rather than the bottle.

Where This Wine Comes From

Recioto is the oldest wine of Valpolicella, made in the Classica hills long before Amarone existed. Grapes are dried over winter and the fermentation is stopped early, leaving natural sweetness behind.

The name comes from recie, dialect for ears, the ripest outer lobes of the bunch traditionally selected for drying.
