About this wine
Odessos Pamid is a fascinating and rare expression of one of Bulgaria's oldest indigenous grape varieties, grown in the Danubian Plain of Northeastern Bulgaria near the village of Slanchevo. The 18-year-old vineyards sit on clay and limestone soils at 100 metres altitude, close to Lake Varna and the remarkable Pobiti Kamani rock formations. A cool growing environment produces grapes of natural freshness and delicate character.
Made by the innovative Odessos Urban Winery, the wine is crafted with meticulous care: hand-harvested, hand-sorted, and vinified using 50% destemmed grapes in open fermenters alongside 50% whole clusters. Spontaneous fermentation with wild yeasts is followed by four months of ageing in large Bulgarian oak barrels on the fine lees, bringing gentle texture and complexity to this light, fresh red. With minimal intervention and no shortcuts, this is Pamid expressed with honesty and precision.
