Odessos Urban Winery is based in Varna on Bulgaria's Black Sea coast, an innovative producer pioneering the urban winery concept in Bulgaria and crafting wines that celebrate the country's indigenous grape varieties. Dimyat is one of Bulgaria's oldest and most characterful white grapes, historically grown along the Black Sea coast and noted for its natural aromatics and freshness. Here, Odessos applies a gentle skin-contact maceration to the Dimyat, adding texture, depth and subtle tannic grip without sacrificing the variety's natural freshness.
The 2025 expression is bone dry and beautifully textured, with citrus blossom, white peach and a delicate herbal note on the nose, and a clean, gently structured palate that finishes long and fresh. An intriguing natural wine for those seeking something distinctive alongside grilled fish, cured meats or rich soft cheeses.
