Why we chose it

“Saint-Bris is a unique Loire appellation — the only AOC that uses Sauvignon Blanc in Burgundy. Simonnet-Febvre’s version is fresh, citrusy and genuinely interesting.”

About this wine

Simonnet-Febvre Saint-Bris Sauvignon Blanc is a genuine rarity, the only appellation in Burgundy to grow Sauvignon Blanc rather than Chardonnay. Sourced from the Saint-Bris vineyards in the Yonne, it offers a lively, mineral-driven style with aromas of green apple, lime zest and citrus, layered with delicate floral notes and a distinctive flinty minerality.

Bright and refreshing on the palate, with crisp acidity and a clean, persistent finish. A fantastic alternative to Sancerre or Pouilly-Fumé, and equally wonderful as an aperitif or alongside fresh seafood, goat's cheese or asparagus risotto.

About the producer

Simonnet-Febvre is one of Chablis' most storied wine houses, founded in 1840 by Jean Simonnet. The maison is celebrated for Chablis of uncommon precision and mineral authority, as well as wines from the neighbouring Saint-Bris appellation — one of the very few Sauvignon Blanc appellations in Burgundy. Now part of the Louis Jadot group, Simonnet-Febvre continues to uphold its tradition of high-quality, terroir-driven wines from northern Burgundy.
