Wine with cheese · 434 wines

The key to pairing wine with cheese is matching weight and intensity — delicate cheeses need lighter, fresher wines, while aged and pungent varieties need something with more body. White wine is often the safer bet: its acidity cuts through fat and doesn't clash with dairy the way tannins can. Reds work beautifully with hard, aged cheeses like Cheddar or Comté, while fortified wines — Port with Stilton, Sauternes with Roquefort — are among the great classics.

A mixed cheeseboard usually calls for more than one wine, but if you need a single bottle that works across the board, a medium-bodied white with good acidity — a Viognier, a white Burgundy or an Alsace blend — tends to be the most crowd-pleasing choice. Sweet wines like Sauternes or late-harvest Riesling work brilliantly with stronger, more pungent cheeses. If you prefer red, a lighter style — Pinot Noir, Gamay or a younger Bordeaux — will cause fewer conflicts than something very tannic.
